Update on Nandos Chicken

Well tonight was attempt number three at Nandos chicken and as promised here’s how it went.

This time I managed to get my favourite Nandos part of a chicken, the wings. The previous evening I got 7 of these wings and put them in a lunch box with the Nandos Peri Peri marinade. The remainder when in the freezer. I recalled that the Roosters website had mentioned (alongside the fact that they steam their chicken) that they marinaded their chicken for 24 hours. I decided I was going to marinate my chicken for at least this length of time.

When I returned from work this evening I popped the wings in the steamer once again and put it on for 15 minutes. I can certainly see why if Nandos do steam their chicken they don’t really publicise this much. The smell that results from steaming chicken is quite horrid and to be honest I couldn’t think of anything worse than eating chicken that had only been steamed. Nandos must worry that if they were too public about steaming chicken then people might be put off. That’s if they do steam it, I don’t know for certain!

Anyway the chicken was steamed through and it was time for the grilling. This time round I had a master plan. When grilling I would not baste the chicken with the marinade, I had already marinaded the chicken with this! Instead, at the weekend, I had managed to buy some peri peri sauce from the supermarket and I was going to baste this on to the chicken as it grilled. This, as it turns out, was an excellent idea and I’m positive it’s how the do it at Nandos. I’m sure I’ve seen them doing a fair amount of brushing in Roosters.

I had the familiar problem of the sauce burning a bit too much. The other big issue is that because the chicken has already been steamed it’s very difficult to get the skin crispy. Anyway I’m pleased to report that it came out the best so far. The chicken was juicy and extremely flavoursome thanks to my days worth of marinading. The outer skin of the wing was equally as nandos like with the sweet and spicy tastes of the peri peri sauce coming through.

The downsides to this attempt were however apparent. Firstly, the wings as you buy them in the supermarket are not as you might buy them from Nandos. They are whole complete with tips. Most outlets will serve wings cut into two pieces with the tip cut off. I didn’t do this and I regretted it. Next time I will. The other issue of course was the burnt sauce. I’m just not sure at this stage what to do about this. Maybe keep the heat down a bit, maybe use less sauce, I just don’t know.

All in all I am happy, good progress has been made!

Review of my Swan Teasmade

For my recent birthday I was very lucky to receive a teasmade from my colleagues at work. Not an item I would ever normally think to buy although I had noticed them in the shops. They have been missing from the shelves for some time since they were popular in the 70s but Swan seem to have decided to bring them back to the mainstream. Now everyone is free to play!

The first puzzler was why it was called a teasmade and not a teasmaid. I had always assumed it was a teasmaid. I came to the opinion that we are now living in a more politically correct world and maybe people thought using the word ‘maid’ when describing a machine that makes tea for you could be seen as a bit sexist. However after a little research it turns out that ‘teasmade’ is actually the word that has been used all along and is infact a registered trademark, initially with Goblin and now with Swan.

I was pleased to see that my new teasmade looked a lot more modern than its older relatives. The classic teasmade from the 70s often had wooden panelling and as they moved into the eighties they seemed to gain some horrific floral patterns and looked quite simply as you would imagine a kitchen to during this period. To be honest I quite like the ‘retro’ look of the original 1970s teasmades but I don’t think it would really fit in with the current decor of my bedroom.

Teasmades from years ago often seemed to have an analogue clock. The modern Swan teasmade had a kind of digital analogue clock which was basically a round digital lcd face with ‘arms’ that turn black to mimic the movements of a real analogue clock. The face glows a very attractive blue. It’s unclear why Swan have opted for a analogue style digital clock and didn’t just go for a full digital one. Perhaps they wanted to stay true to the teasmades routes.

The blue glow of the clock was a concern initially. It seems to be quite bright. However they brightness of the clock faces reduces when you turn your light out. The unit must have some kind of light sensor to detect this. The blue glow is still fairly obvious in a dark room but if you sleep facing the other way you’ll be ok!

One thing you might want to be aware of is the fact that setting the alarm will not set the alarm for every night like with your traditional alarm clock. I imagine this is a safety feature to stop the teasmade boiling water on a day you don’t expect it. There is a button located directly next to the button used to set the alarm which looks incredibly similar to said button. The issue here is that on several occasions, when setting the alarm when going to bed, I have accidentally pressed the button to boil the water immediately, which isn’t what I wanted to do.

The unit has a very large light on the top which can be turned on by the press of a button. This could be handy if you don’t already have a bedside lamp but if you do, it’s a bit of a waste of space on the unit.

My biggest issue with the teasmade is the fact that it forces you to use the teapot it comes with. If you don’t it won’t. My problem with this is simple. It adds more washing up! Now you not only have to wash up your mug but also the teapot. I have since got around this by not producing tea in the pot itself. I use the pot to simply contain the hot water until I pour it into my mug which contains the tea bag. I don’t really wash the tea pot anymore as it is simply used to contain boiling water which itself sterilises the teapot.

The whole point of a teasmade for me is to have tea in bed before I’ve got up without having to get up. This is ruined by having to get out of bed to get the milk from the fridge. The best solution I have found to this problem has been to buy a huge box of UHT milk pots from ebay. The only problem with this is the fact that the use by date on these is in about 3 months time. I don’t think I can get through 120 pots of uht milk in this time!

All in all I love my teasmade, it’s a bit of a novelty but when I use it it’s a pleasure.

My free play quest to make chicken as good as Nandos now!

Everyone loves Nandos. Well, unless they’re a vegetarian of course. I personally have also become a fan of a rapidly expanding chain of takeaway chicken shops called Roosters. I believe Roosters were once a chain of your average fried chicken shops but they quite cleverly saw a gap in the market. They realised that there are a lot of Nandos fans out there but not everyone wants to sit down in a restaurant and not everyone can afford their prices. Some people just want to walk into a takeaway and walk away with a bag of delicious chicken which is more than just your average fried chicken.

Well I’m a fan of both Nandos and Roosters and want to make their chicken at home. I’ve been experimenting around for a short while now and tonight is the night I will be hitting it spot on (I hope).

The first time I decided I was going to start my quest to make Nandos chicken I wandered into my local branch of Lidl on my way home from work. I planned to buy a few chilis, a lime, some small chicken pieces, ideally wings, and anything else I thought might be useful. Unfortunately Lidl don’t seem to sell chicken wings and the best I could do was legs, they had sold out of thighs. Next I thought I had got lucky, Lidl has stacks of bottles of official Nandos peri peri marinade. So naturally I bought a couple of bottles of this instead of buying raw ingredients.

When I got home I stuck two of the legs in the freezer and the other two I marinated for several hours. Later I slapped them on the griddle pan for about 20 minutes. They looked about done but chicken is as I’m sure you might agree is the kind of meat you want to make sure is cooked all the way through so I finished them off in the oven for another 20 minutes or so.

The result was fairly dry chicken with a nice crispy skin which didn’t taste much like Nandos. I was disappointed but determined to complete my quest. I did a bit of Google research and found a few obscure forum threads which seemed to claim that Nandos first steam their chicken and then finish it off on the grill. I was sceptical of the validity of this information but I later found none of than the Roosters website explaining that they also steam their chicken.

So, I popped in to Wilkos on my way home from work and bought one of those miniature brushes to brush on the marinade when I put them on the grill pan. I put my two remaining, now defrosted chicken legs into the steamer and turned it on. I was very unsure as to how long I should steam them for as I had never cooked chicken in this way before. After a bit of Google research I learnt that steaming really cuts down on cooking time as it’s so efficient. One forum thread put it perfectly – where would you rather stick your hand? In an oven or a boiling hot pan of water?

I steamed the legs for fifteen minutes. They came out looking quite odd. A bit anemic. Plus the veiny and bloody parts of the leg looked quite horrible. Still, I spread on the marinade using my mini brush and slapped them on my grill pan for about 10 minutes. The problem I found here is that the marinade I spread on seemed to burn to the skin very quickly turning it black.

When I was done I was pleasantly surprised to discover this chicken was better than the first attempt. The inside was fantastically juicy and tasted great. The skin was better and spicier but unfortunately a little burnt. So all in all better than the first attempt. However this still didn’t taste like real nandos chicken.
